I first came across this delicious salad in England, there it was called Tri-Color Salad. I guess named for the red, white and green. Since then, I have been schooled to use the correct name which is "Enslata Caprese". This recipe is for a traditional simple salad, however, for a more colorful and flavorful version, you can add some black olives, oregano, few drops of balsamic vinegar and even some slices of roasted bell peppers; and of course don't forget the wine.
